You savor the crabcake, crunching through its sauteed crust and delving into the sweet crabmeat bound together with nothing more than a roux of butter and spices. You feel a bit naughty - even if you order the broiled version. Then you eat the green salad it is served on - skipping the dressing - and you feel virtuous.
