Pretend it's Paris

Few places evoke the classic charms of France quite like Bistrot La Minette, with its red velvet banquettes, crusty house-baked baguettes, and sidewalk seating. This lovely tarte a la tomate, then, is the essence of a ripe French summer lunch. Simple yet elegant, its success is all about good ingredients in perfect harmony, from the buttery pâte brisée crust, to the peeled plum tomatoes touched with thyme and olive oil, to a thin base layer of Dijon mustard and creme fraiche that lends color and a light richness. Add the bitter crunch of a delicate frisee side salad (though just a tad less salt, please), and you'll practically have la vie en tomate on a plate.
