Recipe: Steak Salad

6 to 8 ounces cooked steak, sliced ¼ inch thick (rib-eye, hanger or skirt)

2 or 3 small potatoes boiled (or cooked in microwave) and sliced ¼ inch thick

¼ cup cucumber, peeled and seeded if necessary, or cooked green beans

½ red bell pepper, seeded and cut into narrow strips

Generous handful of watercress, baby spinach, or mixed salad greens

1. To assemble combine all ingredients in a large bowl or arrange all of the components on a plate and drizzle Mustard and Ginger Dressing on top.

Per serving:  482 calories, 66 grams protein, 32 grams carbohydrates, 5 grams sugar, 9 grams fat, 153 milligrams cholesterol, 104 milligrams sodium, 6 grams dietary fiber.
