Generally speaking, the white wines most likely to be unoaked are those whose natural aromatics are intense and appealing. Torrontes, most often grown in Argentina, is a perfect example. This fragrant full-bodied white is like a mash-up of Viognier and sauvignon blanc - providing the nose with a riot of exotic scents that range from fruity to floral to herbal. Oak barrel treatment would dull these vivacious flavors, so the traditional approach is to preserve their freshness with temperature-controlled stainless steel. Try this with boldly seasoned seafood or vegetable dishes like Tom Yum soup or garlicky greens.
