* Tenaya Darlington, author of Di Bruno Bros. House of Cheese: A Guide to Wedges, Recipes, and Pairings (Running Press, $25), is asking cheese lovers nationwide to suggest pairings featuring a local cheese, or a recipe with local ingredients. * July specials abound at Mexican BYO Lolita (106 S. 13th St., 215-546-7100, lolitabyob.com): Buy One, Get One Margarita Pitchers on Sundays; Barbecue Night with ribs and sides on Mondays; and Taco Tuesdays, featuring house-made tortillas and fixings. At month's end, owners Valerie Safran and chef Marcie Turney will close Lolita for two months for renovations. The restaurant will reopen in the fall, with a liquor license.
* Perfect your paella with chef David Ansill on July 26 at Bar Ferdinand (1030 N. 2nd St., 215-923-1313, barferdinand.com). The outdoor class starts at 7 p.m. and includes the signature dish, plus tapas and a Starter Paella Kit. $40. Rain date is Aug. 2.
