Philadelphians may have an opportunity to taste some fresh beer this summer at what would be the city's - and Pennsylvania's - first brew pub. David Mink, owner of the Sansom Street Oyster House, and Jim Koch, founder of the Boston Beer Co., which brews Samuel Adams Beer, hope to open the Samuel Adams Brew House by July on the second floor of Mink's restaurant at 1516 Sansom St. A brew pub produces beer for on-premises consumption. Industry statistics reported 59 brew pubs in operation at the end of 1988, most in California.

The Dock Street Brewing Co. Brewery & Restaurant is only about four weeks old, but if several visits offer an accurate indication, it already appears hot enough to set off the sprinkler system. This restaurant features a relatively new concept. Along with its food, Dock Street serves a number of beers brewed on the premises. It is the second such brew-pub operation in the city. For those unfamiliar with a brew pub, here's how it works at Dock Street: Five to seven beers are brewed there - you can pretty much see the operation - and are available for consumption at the restaurant.

Kennett Square, a borough in Chester County known mostly for its mushrooms, will add craft beer to its list of permanent attractions this fall when it welcomes its first brew pubs. One is owned by Victory Brewing Co., a regional craft-beer giant that sells its products in 34 states and several countries. It has a 212,000-square-foot, $38 million brewing facility in Parkesburg and has the appreciation of county officials who hope the brewer can help boost the county's economic image.

Prior to Prohibition, Egg Harbor City was blessed with a couple of breweries that helped keep the town's numerous beer gardens in supply. But after they were shut down, the taps were never to flow again as they did in the old days. Brad Bowen likes history and he also likes a good brew. So when a 1994 law paved the way for brew pubs, he decided to reach for the tap. Now this small, on-the-way-to-the-Shore New Jersey town with deep German roots has its own "downtown" brew pub: Cedar Creek Brewery & Restaurant.

Each time Dock Street Brewing Co.'s Jeffrey Ware has expanded his business, he has used a touch of creativity. In 1986, with $100,000 in start-up money, he introduced his bottled beer to the city by spending $50,000 on a blowout bash at the Port of History Museum. In 1989, while trying to raise money and open a brew pub where people could drink his beer and eat, he wrangled $750,000 in improvements from the landlord of Two Logan Square - and got new money as a result of that snazzy address.

Ian Blackford is a modest man, so reluctant to flaunt his achievements that gold medals from this summer's Great American Beer Festival hang in the hallway to the kitchen in his Mountain Sun brew pub here. In business only 2 1/2 years, he won them for his Hummingbird Ale and his Arctic Wheat Beer, which he sells out of the narrow, wooden pub that fronts on Pearl Street, a pedestrian mall that ends at the vertical leap of the Front Range of the Rockies. All over Colorado, there are pubs like it - Flying Dog in Aspen, Bristol Brewing in the shadow of Pike's Peak in Colorado Springs, eight alone in Denver's trendy LoDo (for Lower Downtown)

A new brew pub planned at Gay and High Streets would be only a few blocks from the 11,000 students who attend West Chester University. But Iron Hill Brewery & Restaurant owners don't expect to serve too many of them. "It's not our target," co-owner Mark Edelson said. "We get an older crowd, say people 25 to 55. " Edelson and his partners, Kevin Finn and Kevin Davies, gathered here yesterday to announce plans for their restaurant, which they hope will open by September.

The empty F.W. Woolworth Co. building on Gay and High Streets will become a brew pub, filling the borough's most noticeable storefront vacancy. Iron Hill Brewery & Restaurant of Newark, Del., has signed a lease to move into the West Chester building's 10,000-square-foot first floor, co-owner Kevin Finn said yesterday. He said he hoped the restaurant would open by midsummer. "Everything is signed, sealed and delivered," Finn said. "We're really excited to be part of West Chester.

In Stoudtburg Village life can be sehr gut. The rolling Adamstown land, off Exit 21 of the Pennsylvania Turnpike, hugs the huge complex with the protective grasp beer mavens like to use to hold their steins. You can do a little bit of everything here while you watch summer move along: Enjoy a huge Angus steak with beer-battered french fries, try some of Stoudt's 12 microbrewed beers, indulge in antiques shopping and sidewalk sales, or join any number of year-round special events - from Oktoberfest in the fall to next weekend's Microfest and Summer Festival.

"If I may make a recommendation, why not try the sauteed cabbage?" The bartender was speaking to a customer who had just ordered lunch. "It fits perfectly with your veal sausage. " His brogue was heavier than the pint of porter he had just drawn from the tap. Hair that curled in uncontrollable wisps gave him the look of a poet. "And, I might add, the chips are an excellent choice. " After placing the order with the kitchen, the bartender returned to the taps. This time he drew an amber-colored brew.

Uno : Fort Washington. Dos : Fairmount. Tres : Manayunk. Brian Sirhal and chef Tim Spinner open Taqueria Feliz on Thursday at 4410 Main St. (267-331-5874). The former Mainly Shoes store, last occupied by a fortune-teller who knew her lease was ending, was stripped to the bare walls. Canno Design's dining room is ringed by lots of original stone and brick accented by exposed wood and metal highlighted by splashes of color. Unlike Cantina Feliz and La Calaca Feliz, the Day of the Dead decorations are minimal.

With permission granted from our better halves, the only thing cooler than a simple "guys' night out" is a "guys' night" splashed in craft beer. The hardest part in this brew-obsessed region, where the ale flows from South Street to South Jersey in stupefying variety - from hipster gastropubs to Belgian mussel bars, a German brat hall, and even a brunch spot awash in growler drafts - is simply choosing where to begin. Consider it scouting for "girls' night out," too. Great beer is a gift with equal-opportunity appeal.

Ursula the theater organ stood just inside the entrance to the Sunnybrook Ballroom, her pipes silent. A pair of brooms rested against her hulking frame, its insides ravaged by rodents. George Batman, who knows her ivories intimately, instead fingered a portable keyboard at the far end of the ballroom. Between them lay the dance floor, slender boards of Norwegian maple, "miles and miles of beautiful," as one recent visitor described it. "I tell you, God saved this floor," John Giese said, joining in the sounds of salvation ringing across the Lower Pottsgrove site on Saturday.

While any beer drinker worth his hops knows that Yuengling is the oldest brewery in America, Pennsylvania's namesake was brewing traditional English ales in Bucks County long before the Pottsville brewery mashed its first batch of milled grains in 1829. Augmenting William Penn's penchant for the malted beverage will be the first Newtown Brewfest, hosted by Newtown Main Streets on Saturday at the Stocking Works. Laborers at Pennsbury Manor were resigned to drinking whatever came out of the brewers' fermentation vessels, but visitors to the Brewfest can sample the wares of more than 30 breweries, brew pubs and beer importers (though trying the output of all 30 is not recommended)

The original owner of Dock Street, one of the city's first craft microbreweries, which closed its doors about four years ago under different owners, is planning a comeback in a new neighborhood. Rosemarie Certo applied to the city's zoning board and hopes to open a 15-barrel wood-burning stove pizza restaurant and beer house in as little as three months - in time for one of its signature brews, the pumpkin ale. It would operate in an old firehouse at 50th Street and Baltimore Avenue in West Philadelphia.

The SS Dogfish, to most casual observers, is little more than a red rubber dinghy. And despite the bright spring sunshine that beamed down upon the Lewes Canal near the Delaware shore, it was still rather waterlogged with rain. To Dogfish Head brewer Sam Calagione, however, whose new book, Brewing Up a Business (Wiley, $24.95), details his unorthodox entrepreneurial rise, great journeys have always begun in tiny wet vessels. And this boat, docked just outside his Brewmaster's Suite at the Inn at Canal Square, was poised for a cruise to the farthest ends of his growing empire of beer.

Iron Hill Brewery deserved better from LaBan I am a member of a Chester County home brewer's club, the American Home Brewers Association, and the West Chester business community. Within the ranks of our home brewer's club, we account for nearly 100 years of brewing experience. Craig LaBan's article of Nov. 13 in the "Where We Live - West Chester" section referred to Iron Hill Brewery & Restaurant in West Chester as having "unexciting" beers and brew-pub fare "no better than average.

Today this city of 550,000, the capital of Colorado and the Rocky Mountain West, will swear in a native Philadelphian as its new mayor - a Denver bar owner the locals call "Hick. " Racing between media events last week, Mayor-elect John W. Hickenlooper, 51, a political nobody-turned-electoral sensation, showed no signs of nervousness. With the voting public weary of career politicians, some analysts see a new kind of urban leader in the lanky, sharp-witted brewmaster: business friendly, socially progressive, irreverently honest and, in his own way, hip. "He may be a prototype for the new mayors," said Floyd Cirulli, a pollster and political analyst.
