On the Bravo kitchen-competition series Top Chef , the cheftestants are charged with creating cutting-edge food on the spur of the moment. Two weeks after his win on Season 7, Kevin Sbraga had us out to his real kitchen - in the childhood Willingboro home he shares with his pastry-chef wife, Jesmary, daughter Jenae, 5, and newborn son Angelo. Mealtime at the Sbragas' place is nothing fancy, and the Top Chef, 31, cooks on an electric stovetop. One of his favorite dishes is a one-pot creation of steamed clams and Italian sausage on top of chickpeas, perfect for Sunday after church.

IT'S PRETTY HARD not to recognize former Sixers center Dikembe Mutombo . But Dana Spain , president of Philadelphia Animal Welfare Society, says that she couldn't figure out why the 7-foot-2 passenger she spoke French with Sunday on a flight from Paris looked so familiar. Spain, who also works in branding and marketing, said that she and Mutombo talked real estate, including how he hasn't been able to sell his home in Villanova, and only when they traded business cards at PHL baggage claim did Spain get "clued into the fact that I'm a total f---ing idiot," she told us yesterday.

If love has a flavor, it is surely chocolate. For generations, chocolate has served as a token of affection, an aphrodisiac, a prelude to romance. Yet few know its culinary merit beyond candy and desserts. More chefs are using chocolate in new ways, as a savory ingredient in appetizers, soups, salads and even entrees. Dark and bittersweet, chocolate brings out complex flavors in roasting sauces, says Kevin Sbraga, chef de cuisine at the Ritz-Carlton's Grill. Milder white chocolate (mainly cocoa butter)

For all the clattering, sizzling and bravado that courses through the reality series Top Chef, yesterday's Philadelphia casting call had - well - none of that. Those hoping for a chance to wow the judges in the Bravo show's sixth season patiently waited their turn under crystal chandeliers at hushed banquet tables at Nineteen restaurant at the Park Hyatt at the Bellevue. (Well, there was a little snippiness, as three hopefuls snickered when a guy in a lavishly embroidered and highly starched chef's jacket walked in.)

Effective next week, the short-lived Di Vino Wine Bar just off Rittenhouse Square gives way to Cichetteria 19 (267 S. 19th St., 215-545-0441), a Venetian-inspired small-plater. New partner/executive chef Andrea Luca Rossi, a onetime gondolier in Venice and previously manager at the nearby Girasole, has retained sous chef Shiah Blau. The cozy atmosphere is aimed at the neighborhood, and the plan is to obtain local and organic ingredients. Most dishes, intended to be paired with 2.5-ounce wine samplings or cocktails, are $8 or $9, while pizzas are in the mid-teens; see menu at http://go.
