PENNSDALE, Pa. - The land of scrapple and chipped ham is starting to get a taste for jambalaya and boudin. Thanks to an influx of Southerners filling jobs in north-central Pennsylvania's booming natural gas industry, a region not often placed on many culinary maps is finding itself flush with the food found below the Mason-Dixon Line. Suddenly, convenience stores stock sweet tea, barbecue is a hot seller, and the almost Norman Rockwell-quaint Country Store in Pennsdale even makes its own boudin, a pork sausage popular in Louisiana.

CRAIG HETHERINGTON, a 44-year-old Bedford County trucker, held a sign reading, "Pat Toomey, You Are Fired. " Kay Hartman, a Mifflin County "tea-party patriot old enough to be wise," carried a large white flag featuring a black AK-47 over the words "Come and Take It. " Another woman held a sign: "Gun Control is False Hope; Jesus Christ is the True Hope. " And a bearded man wearing a "Don't Tread on Me" red vest held a sign: "We Come Unarmed (this time). It's a simple, critical, and sobering question at the heart of the debate over privatizing state liquor stores: Will Pennsylvanians drink more booze if sales are wrested from government control? Advocates say liquor privatization would mean more convenience, better selection, and lower prices. But public-health experts say reducing the government's role in alcohol sales comes with a potentially harmful downside - people buy more of the alcoholic beverage that is privatized. In 2011, the Community Preventive Services Task Force, an independent group appointed by the federal Centers for Disease Control and Prevention, recommended against privatization "based on strong evidence that privatization results in increased per-capita alcohol consumption.
